Back on the Low-Fat Track

After last night’s pizza incident, I’m back on the low-fat track. At least until dinner time, when I might make an exception so I can enjoy fresh insalata caprese from my garden. Meanwhile, here’s what I’ve had to eat:

Breakfast

Egg Beaters “cheese and chive” flavor, 1/2 c. (cooked in non-stick pan)
1 slice Cassava melon
1 piece rye toast sprayed with that fake butter spray
1 glass buttermilk
3 cups of coffee (gotta have it!)

Lunch

1 skinless, boneless chicken breast
1 small zucchini
(both cooked on my George Foreman, sprayed with Pam)
1/2 apple, sliced
1 slice rye bread with 1 wedge Laughing Cow skim cheese spread on it
2 glasses iced tea sweetened with Splenda (Neeeed caffeine!)

Snack

Other half of my apple, sliced
1 glass buttermilk

Just so you know, I was gifted with three beautiful zucchini today and thought of you. Not sure what that says about me, but I’m Foreman grilling one of those babies tonight!

That’s definitely my favorite way to have zucchini!

I’ll have to post my recipe for zucchini bread soon. After all the substitutions I made to get it low fat, I couldn’t believe when it turned out yummier than the original! It’s almost like a cake.

Hmm…. cake….
