Jon cooked up what looks to be a soup that’s not only light but lovely to look at, too. Although he didn’t share the precise combination of bok choy, bean sprouts, chili and stock, my calorie calculations say it totals to a mere 45 calories per bowl. (Assuming one uses homemade, skimmed stock, of course.)
What’s not to love about that?

I have a really good broccoli cheese soup recipe that is only about 2 points (sorry, Weight Watcher in me) per bowl. I will find it for you if you like broccoli cheese soup. It’s really good when you throw a couple of pieces of popcorn in it and then eat them up. Am I weird?
Not weird at all. I have an Asian-inspired spicy soup that I sometimes throw popcorn, too.
oooh! Thanks for the nice link. I wish I could tell you everything I did and put into the pot, but I wing it ALL the time!! Which is a particular problem when you’ve come up with a winning recipe, no way to duplicate it! But yes, the stock is home made, cooled and skimmed!
Sigh.. I will try to remember and share!

P.S. Nothing goes with a dish like that as well as a nice piece of grilled chicken! Chicken on the grill ALL the time! Several days a week.
